Easy Delicious Chili

▪ 1 white onion
▪2 tablespoons minced garlic
▪1 (15oz can) diced tomatoes
▪3 (15oz) cans of 3 different beans of your choice (I have black beans, kidney + pinto, and chickpeas)
▪1 cup water
▪seasonings: 2 teaspoons chili powder, 1 teaspoon paprika, 1.5 teaspoons cumin, salt & pepper (all can be adjusted to taste preference)
▪1 tablespoon hot sauce (sirracha)
▪1/2 teaspoon mustard (I used Dijon mustard)
▪OPTIONAL: add in meatless crumbled for extra protein.

– Sauté onion & garlic for about 5 minutes.

– Add in remaining ingredients (except meat crumbles if using)

– Let cook for 15-20 mins.

– Pour 3/4 of the mixture into a blender and roughly blend to a clumpy texture – not puréed.

– Pour blended mixture back into the pot and add meatless crumbles (if using) and cook for 5 minutes more.

– I like to add extra sirracha on top along with hemp hearts for more protein. (Other great toppings are scallions and crumbled wheat crackers. Serve with a salad!)
